Indirect Grilling: Low and Slow, Lid Down.

Indirect grilling flips the script. You build your fire on one side of the grill (or light only some of the burners on a gas rig), then place the food on the other side, away from the flames. The lid goes down and stays down. Now your grill behaves like an oven running between roughly 225°F and 350°F, with heat circulating around the food instead of hammering it from directly below.

This is the method behind tender whole chickens, smoky ribs, roast turkey, and juicy pork. The lower, gentler heat gives collagen time to melt into gelatin and fat time to render, which is exactly what makes tough cuts turn silky. Here's the secret that ties the whole thing together: you don't have to choose. Build a two-zone grill and you've got direct heat on one side and indirect heat on the other, every single cook. This is how restaurants think about a grill, and it upgrades your backyard game instantly.

Two-zone on a charcoal grill:

  • Light a full chimney of coals. Once they're ashed over, pour them all onto one side of the charcoal grate — or split them to both outer edges with a gap down the middle for a "banked" setup.

How to Know When It's Done: Internal Temperatures That Matter.

Method tells you how to cook. Internal temperature tells you when to stop. A reliable instant-read thermometer is the most important tool in your kit — guessing by sight and feel is how good cooks accidentally serve undercooked chicken. Here are the USDA safe minimum internal temperatures to keep in your back pocket.

  • Poultry (chicken, turkey, duck): 165°F
  • Ground meat (beef, pork, lamb): 160°F
  • Whole cuts of beef, pork, veal, and lamb (steaks, chops, roasts): 145°F with a 3-minute rest
  • Fish and shellfish: 145°F
  • Leftovers and reheated dishes: 165°F

Those are the safety floors, not the flavor targets. For best eating quality, most cooks pull poultry around 160–165°F and let it carry over to safe temperature as it rests. Reverse Searing and Other Hybrid Moves Worth Knowing.

Once you're comfortable with both methods, you can combine them into techniques that beat either one alone. The most famous is the reverse sear, and it's a game-changer for thick steaks and roasts.

Here's how it works. Set up your two-zone grill, then cook the meat over indirect heat first, lid down, until the internal temperature reaches about 100°F to 110°F for a steak (or within 20 to 25 degrees of your target for a roast). This gently brings the whole cut up to temperature evenly, edge to edge. Then move it over the direct zone and sear hard for a minute or two per side until you've got a deep crust and the right final internal temperature. The result is a steak with a thin, gorgeous sear band and an almost perfectly even pink interior — hard to achieve with direct heat alone.

Other hybrid tricks worth stealing: start chicken skin-side down over direct heat for a few minutes to crisp it, then move it to the indirect side to finish. Grill thick burgers over direct heat, then move them to the cool side to melt cheese and cook through. Roast a whole chicken indirectly, then slide it over the coals for two minutes at the end to bronz the skin. Every one of these is just the two zones doing their jobs in sequence.
